Here’s another yummy recipe from my mum. At Christmas, she’d made rum balls (which I’ve never liked) and these delightful little morsels, apricot rolls. I was delighted – finally, a decent alternative to rum balls. With a bit of experimentation, I think you could Christmas these up a bit – I’m thinking cranberry and pistachio versions … might need to try that one out!
Our school has a nut free policy (which drives me crazy when it comes to coming up with lunchbox treats for the kids) and I reckon these are going to appear in lunchboxes quite a few times this year!
This is also a very easy recipe to get the kids involved with. There’s no cooking, just mixing and rolling.
1 ½ cups apricots, chopped (you can buy ready chopped apricots, or blitz them if you can’t be bothered chopping)
½ cup sultanas
2 cups shredded coconut
2/3rds cup condensed milk.
Squish all the ingredients up together. Roll into a long snake roll, and slice. You can roll in some extra coconut if you like, and you can also roll them round in your hands to make balls if you prefer. If you’re making these with children, I’ve found that this is the way children prefer to do them – they’re so much more hands on!
